OUR MOVE TOWARDS A GREENER FUTURE
Running a restaurant has not traditionally been the most environmentally friendly operation.
With the gas fires burning for the duration of service, things aren’t the greenest. How, in 2022 can we achieve a more sustainable way of doing things?
We have decided to take action and are committing to a kitchen refurbishment that will significantly reduce our gas consumption and ultimately our carbon footprint. Gone will be our gas hobs, replaced with induction. This simple change will give us the potential to save 24 tons of CO2 emissions each year.
As part of the kitchen face lift, our beloved mirrored disco pizza oven is also being replaced. Having originally salvaged those famed 1940s shaving mirrors that adorn our current model, we didn’t want for them to go to waste. We are grinding them down and using the material to resurface our table tops. This is all part of our commitment towards a circular economy. We are working with Hackney Council and other local businesses on initiatives that will drive this throughout the community, Whether this is re purposing tomato tins or reusing glass bottles, we here at LARDO are striving to make our business more sustainable.
We are always happy to hear of any other initiatives in our community that we can be part of,. At a time when our environmental impact is being felt more than ever, we need to work together as one to make change happen instead of sitting on the fence.
